Kaju Barfi
Ingredients
- Cashew Powder – 3 cups
- Water – half cup
- Sugar – 2 cups
- Silver foil – for decoration
Direction
Firstly make syrup by combining sugar and water. Then dissolve the cashew powder into it. Stir it continuously until the solution becomes thick. Now, spread it on a plate and put the silver foil over it. Let it cool down for some time. After that, cut the mixture in proper barfi shapes. Your tasty Kaju Barfi is ready to be served!

Badam Phirni
Ingredients
- Almonds
- Milk – 2 and half cups
- Rice flour – 5 tablespoons
- Saffron
- Sugar – 5 tablespoons
- Cardamom powder – 1 teaspoon
Direction
First of all, grind the almonds. After that, make a fine paste by mixing it with some milk. Now add the rice flour to the almond and milk paste. Boil the milk and add sugar to it. Stir continuously until the sugar dissolves completely. Now mix the saffron strands with little amount of milk. Add the rice and almond-milk paste into the boiling milk along with the saffron milk. Continue to stir for some more minutes. You will observe that it has attained a thick custard type consistency. Sprinkle the cardamom powder and take the entire mixture off fire. Let it cool to the room temperature and then serve it to your guests on this Diwali.
Dry Fruit Kheer
Ingredients
- Boiled rice – 1 cup
- Dry fruits (raisins, pistachios, cashew nuts and almonds) – half cup
- Milk – 1 cup
- Fresh cream – half cup
- Vanilla essence
- Sugar – 1 cup
Direction
Mix the boiled rice, sugar and the milk and boil it for some time. Let it thicken. Now add the dry fruits and the fresh cream to the mixture. Continue to boil for some more time. Take it off the fire and pour it in a bowl. Add a few drops of vanilla essence before serving. You can serve it hot or even chilled; it is completely up to you.
Gajar Ka Halwa
Ingredients
- Carrots – 1 kilo
- Water – ¾ of a cup
- Milk – 1 liter
- Cardamom seeds – 1 teaspoon
- Sugar – 450 grams
- Raisins – 2 tablespoons
- Pistachios – 2 tablespoons
- Almonds – 2 tablespoons
- Ghee – 3 tablespoons
Direction
Firstly, wash the carrots and then grate them. Soak the raisins in water for some time. Bring the water to boil and then add the grated carrots to it. Cook it for some more time. Now, add milk and continue to cook on a low flame for around one hour. Stir occasionally. Add ghee and sugar to the mixture and cook it until the sugar dissolves completely. Now add the crushed cardamoms and the raisins to it. Mix it well. Remove it from the flame and let it cool. Serve it after garnishing with pistachios and almonds.
